I recently began taking martial arts classes at school, and I am wondering if they will affect my hair growth in any way. I sweat during these classes, although not very excessively; its normal sweat. I read that sweat damages hair, is this true? I hope the sweat won't damage my hair and ruin my goals of growing out. In addition, we do a lot of rolling around on mats as part of our training- a lot of this is done on top of my head. Will that damage my hair in any way?

I started with Karate this year myself (oldest white belt in the dojo)
I wash my hair as soon as possible after excessive sweating. Not because I've noticed any obvious damage to my hair from leaving the sweat in my hair for a couple of hours - i just get dandruff like it's nobody's business if i wait more than an hour to wash my hair after excessive sweating (the dandruff persists for several days even after washing my hair).
You don't need to shampoo though. Just thoroughly rinsing my hair and scalp prevents the dandruff.
As for the rolling... i don't know if your instructor will permit you to wear a skullcap or bandana or something similar but ask them about it. That would be my suggestion. If you guys practice barefoot and roll on the same surface that you are standing on and you are not permitted to cover your head, please invest in a shampoo with anti fungal properties. Don't get Athlete's foot on your scalp :-(

Both Willie Nelson and Tom Araya take martial arts. They both have long hair. I dont think you have anything to worry about. I would wear my hair up.
