I wash my thick shoulder length hair every day, and maybe that's making it drier than it otherwise would be, but what can I put on it to make it easy to comb & shiny?

After shampooing, towel dry a bit until damp. Then use some mousse and let it dry naturally. No blow dryer. It will look great.

a conditioner (in German called "Spülung") helps very well for combing. I use it after shampooing and washing only on the strands of the hair (not on the scalp). I heard the conditioner can also help against split ends.
For combing I use a wide teeth hard rubber saw cut comb, it helps very well for detangling the wet hair without destroying it.

Try using a leave-in conditioner that has a bit of dimethicone in it, like Infusium 23 or The Body Shop's Amlika Leave-In. Dimethicone is a silicone that makes your hair shiny and bit slippery so it tangles less. Don't use a lot or your hair will look greasy, and use a clarifying shampoo like Neutrogena's, or a vinegar rinse, every couple of weeks to get rid of silicone buildup. And be sure you are using a gentle, moisturizing shampoo. I learned this from my sister.
