I talked to a friend of mine at work who grew up in Southern India and made coconut oil there. He said that he made it by opening the coconut (the milk probably has some oil, but he didn't use it to make oil) and then took out the white meaty stuff. He then crushed it in a stone container that was shaped so that the oil that he got out of the meat would drain to the bottom-coconut oil. He did say it would only last about 2 weeks before it went bad (for cooking-not for hair care) and that it would turn into a gelatine over 60 deg F (you can turn it back into an oil by heating it up).

You are right, it can be a pain making oil yourself. Plus a lot more goes into making the coconut oil that is sold in stores (like filtering etc.)
Coconut oil can sort of freeze during the winter. Just heat it up (dip the bottle in hot water or like me carefully heat it in a microwave). Actually it is an even better feeling if you apply lightly warm (just a little warmer than room temp) oil.
I just found out that ya gotta dry the coconut first. In India this can be done in a couple of days cuz of the climate-probably longer in Northeastern America....just buy it if ya can....it's pretty cheap!
