I have seen girls tying their hair into buns just using a scrunchie and no pins. How do they do that? I have tried all sorts of combos with no success.

Use a small (or large) "rat" clip. It's the kind of clip with
4 to 5 fingers--like spreading the fingers on both your hands,
bending your wrists inwards, and joining your hands together.
You can find them at Wal-Mart and many variety and drug stores.
With one hand, with your fingers
ring together your hair in back as if you
were going to "rubber band" it into a pony tail.
With your other hand, roll your "pony tail" hair into
a bunch.
Let go with the first hand, and use it to clip or clamp
your hair bunch.
Voila! It's very easy. All you need is a clip.
The small clips come in a package of 4; the big clips are sold
individually.

I can do it without anything to hold it down. It's getting harder as my hair gets longer, but if I'm careful, I can still do it. The secret is to put a strong twist into the hair. When you twist something long like that, it naturally coils up on itself to free up some of the tension from the twist.
More specifically, I start at the base of an untied pony tale and begin twisting while holding the hair not quite taut. As the hair continues to be twisted, it naturally starts to coil around itself. As it coils, some of the tension of the twist is released. As this happens, keep twisting, always adding to this twist tension. When you finally get to the end of the hair, push the end underneath the last round of twisted hair. If you wrapped the hair tight enough, it should hold. It may not hold if you have exceptionally silky hair, or if the end of your pony tail is exceptionally blunt. If this is the case, splay the ends a bit to give the hair tie or scrunchie something to hold on to.
