How would you recommend growing it long from a short hairstyle without looking like a dork. I haven't had a haircut for about 2.5 months and I'm planning on growing it to about shoulderlength (or a bit above), but I don't want to have a mullet in the middle of the two extremes. Any tips?

I suggest not worrying about it. Instead of fussing over it, just manage the dorky stage as best you can. Don't prolong the stage by trimming or "neatening up". Just bite the bullet and do it. You will, at one time or another, look like a dork. Just be cool with yourself and get the awkward stage over with.
Personally, I think you should go for trims every 8 weeks. However, just trim up the back at the nape of the neck so that the front, sides, and hair at the top of the back of the head will eventually reach down to be equal. If you leave it a 18 months before you trim it all to an equal length... its going to look awful until that final trim.
Just be patient. Wait a year from last haircut (then have a SLIGHT trim) and wait another 6 months. You'll get there eventually.
One of two ways to go, mullet or mop. You'll get through it.

As long as you can handle the dorky stage... it can last six to eight months... then get it even'd. If you're starting from a medium length style, where you have different lengths all over your head (shorter on the sides and back, longer on top, halfway between on the front), your ugly stage will be extra-ugly, so you might get a preliminary evening cut.
